Ingredients
For the dough: 250 g flour
125 g unsalted butter, softened
70 g sugar
1 egg
1 pinch of salt
For the filling: 5 to 6 apples (Canada or Reine des Reinettes)
3 eggs
150 g heavy cream
100 g sugar
80 g almond powder
1 packet vanilla sugar
1 tablespoon flour
Butter for the mold
Instructions
Prepare the dough by rubbing the flour with the softened butter, sugar, egg, and salt until crumbly. Form a ball, wrap it, and let it rest in the refrigerator for 30 minutes.
Preheat your oven to 180°C (350°F). Butter your tart mold.
Roll out the dough and line the mold. Prick the bottom with a fork.
Peel, core, and slice the apples into regular slices, then arrange them harmoniously on the dough.
In a bowl, whisk together the eggs, heavy cream, sugar, vanilla sugar, almond powder, and flour until smooth.
Pour the preparation evenly over the apples.
Bake for 35 to 40 minutes, until the tart is golden and the center is set.
Notes
Ensure the dough is worked quickly so it stays crispy. For a professional result, use high-quality heavy cream and ensure the apples are thinly sliced for even cooking. Store in the refrigerator for up to 2 days.
